Ingredients

Bowl Ingredients:

1 cup black beans, drained and rinsed

1 avocado, sliced

Instructions
- Marinate the Shrimp: In a medium bowl, toss the shrimp with olive oil, lime zest, lime juice, chili powder, cumin, paprika, garlic powder, salt, and pepper. Let marinate for 10–15 minutes.
- Cook the Shrimp: Heat a skillet over medium-high heat and cook the shrimp for 2–3 minutes per side, or until pink and opaque.
- Prepare the Bowl: In a separate bowl, combine the rice, black beans, corn, red bell pepper, red onion, and chopped cilantro. Divide the rice mixture evenly into bowls. Top each bowl with the cooked shrimp and sliced avocado.
