Ingredients

Scale

    Meatloaf:

  • 1 pound ground beef
  • 1/2 pound ground pork (or use all beef)
  • 1 packet taco seasoning
  • 1/2 cup crushed tortilla chips
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup salsa
  • 1 egg
  • 1/4 cup chopped onion
  • 1/4 cup chopped fresh cilantro
  • 1 teaspoon garlic powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • Extra salsa and cheese for topping (optional)

Instructions

  1. Preheat the oven: Preheat the oven to 375°F and lightly grease a loaf pan or line with parchment paper.
  2. Mix the ingredients: In a large bowl, combine ground beef, ground pork, taco seasoning, crushed tortilla chips, shredded cheddar cheese, salsa, egg, onion, cilantro, garlic powder, cumin, salt, and pepper. Mix just until combined—do not overmix.
  3. Bake: Press the mixture evenly into the prepared loaf pan and smooth the top. Bake for 45–50 minutes or until the internal temperature reaches 160°F.
  4. Optional topping: If desired, top with extra salsa and shredded cheese during the last 5 minutes of baking.
  5. Rest and serve: Let the meatloaf rest for 5–10 minutes before slicing and serving.

Notes

  • Serve with Mexican rice, black beans, or a simple avocado salad.
  • You can use ground turkey for a leaner version.
