Hot Sauce Ingredients
- 10 banana peppers (about 1 cup chopped)
- 3 garlic cloves, minced
- 1 cup white vinegar
- 1 tsp salt
- 2 tbsp brown sugar
- ½ cup water
- 1 tbsp olive oil (for sautéing garlic)
Instructions
- Prepare the peppers: Wash the banana peppers under cool water. Remove stems and seeds if you prefer less heat.
- Sauté garlic: In a medium saucepan over medium heat, heat the olive oil and sauté the minced garlic until fragrant, about 1-2 minutes.
- Add ingredients: Add the chopped banana peppers, white vinegar, water, salt, and brown sugar to the saucepan. Stir well to combine all ingredients.
- Simmer the mixture: Bring the mixture to a gentle simmer and cook for 15-20 minutes, stirring occasionally, until the banana peppers become tender.
- Blend the sauce: Remove the saucepan from heat and let the mixture cool slightly. Transfer to a blender and blend until smooth or leave it chunky, depending on your preference.
- Bottle and store: Pour the blended sauce into sterilized bottles and seal tightly. Store in the refrigerator and use within 2-3 weeks for best flavor.
Notes
- Removing the seeds reduces the heat but retains flavor.
- Adjust the amount of brown sugar to balance acidity and sweetness as desired.
- Sauce can be refrigerated for up to 3 weeks; always use clean utensils to avoid contamination.
- For a spicier sauce, leave seeds in or add a hotter pepper variety.
- Sterilize bottles by boiling them or washing in a dishwasher on a high-heat cycle.
