Description

A comforting and creamy twist on traditional lasagna, this White Lasagna Soup is a hearty and flavorful dish perfect for a cozy night in. Loaded with Italian sausage (or chicken), spinach, and three types of cheese, this soup is a satisfying meal on its own.

Ingredients

Scale

Main Soup:

  • 1 tablespoon olive oil
  • 1 small yellow onion, diced
  • 3 cloves garlic, minced
  • 1 lb ground Italian sausage or ground chicken
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 cups chicken broth
  • 2 cups water
  • 8 lasagna noodles, broken into bite-sized pieces

Finishing Touches:

  • 1/2 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup ricotta cheese
  • 2 cups fresh spinach, chopped

Instructions

  1. Saute Aromatics: In a large pot, sauté onion in olive oil until soft. Add garlic, then brown the sausage or chicken.
  2. Add Seasonings and Broth: Stir in basil, oregano, pepper flakes, salt, and pepper. Pour in broth and water, bring to a boil.
  3. Cook Noodles: Add lasagna noodles, cook until tender.
  4. Finish Soup: Lower heat, stir in cream, cheeses until melted. Add spinach, cook until wilted.
  5. Serve: Ladle into bowls, top with ricotta.

Notes

  • For extra richness, stir the ricotta directly into the soup instead of using it as a topping.
  • This soup thickens as it cools—add a splash of broth or water to reheat leftovers.
