For the Cookies:
- 1 cup unsalted butter (softened)
- ½ cup powdered sugar
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- ½ teaspoon salt
- ¾ cup finely chopped maraschino cherries (drained and patted dry)
- ¾ cup white chocolate chips or chunks
- Additional white chocolate for drizzling (optional)
Instructions
- Preheat the Oven: Preheat your oven to 325°F (165°C) and line a baking sheet with parchment paper.
- Cream Butter and Sugar: In a large mixing bowl, cream the softened butter and powdered sugar until light and fluffy. Mix in the vanilla extract.
- Add Flour and Cherries: Gradually add the flour and salt, mixing just until combined. Fold in the chopped cherries and white chocolate chips.
- Shape and Bake: Scoop out tablespoon-sized portions of dough, roll into balls, and place on the baking sheet. Flatten each ball and bake for 12–15 minutes until lightly golden.
- Cool and Decorate: Allow the cookies to cool on the baking sheet before transferring to a wire rack. Drizzle with melted white chocolate if desired.
Notes
