- 6 oz mascarpone or cream cheese (or 1/2 cup thick Greek yogurt)
- 2 tablespoons olive oil
- 1–2 tablespoons fresh lemon juice
- 1/2 clove garlic, minced (optional)
- Salt and freshly ground black pepper, to taste
For the roasted strawberries:
- 1 lb fresh strawberries, hulled and halved
- 2 tablespoons balsamic vinegar
- 2 tablespoons honey or maple syrup
- Pinch of salt
For serving:
- Fresh basil, thinly sliced
- Toasted baguette slices or crackers
- Extra olive oil, for drizzling
Instructions
- Preheat oven and prepare strawberries: Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper. Toss strawberries with balsamic vinegar, honey/maple syrup, and salt. Roast for 20–25 minutes.
- Make whipped feta: Blend feta, mascarpone/cream cheese, olive oil, lemon juice, and garlic until smooth. Adjust seasoning.
- Assemble: Spread whipped feta on a platter, top with roasted strawberries, basil, and olive oil. Serve with bread/crackers.
