Description

Indulge in the perfect balance of savory and sweet with this delightful Whipped Feta with Roasted Strawberries recipe. Creamy whipped feta pairs harmoniously with tangy balsamic-roasted strawberries, creating a flavorful appetizer that will impress any guest.

Ingredients

Scale

For the whipped feta:

  • 8 oz feta cheese
  • 6 oz mascarpone or cream cheese (or 1/2 cup thick Greek yogurt)
  • 2 tablespoons olive oil
  • 1–2 tablespoons fresh lemon juice
  • 1/2 clove garlic, minced (optional)
  • Salt and freshly ground black pepper, to taste

For the roasted strawberries:

  • 1 lb fresh strawberries, hulled and halved
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons honey or maple syrup
  • Pinch of salt

For serving:

  • Fresh basil, thinly sliced
  • Toasted baguette slices or crackers
  • Extra olive oil, for drizzling

Instructions

  1. Preheat oven and prepare strawberries: Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper. Toss strawberries with balsamic vinegar, honey/maple syrup, and salt. Roast for 20–25 minutes.
  2. Make whipped feta: Blend feta, mascarpone/cream cheese, olive oil, lemon juice, and garlic until smooth. Adjust seasoning.
  3. Assemble: Spread whipped feta on a platter, top with roasted strawberries, basil, and olive oil. Serve with bread/crackers.

Notes

  • For a tangier flavor, use Greek yogurt instead of mascarpone.
  • Roasted strawberries can be made a day ahead and stored in the fridge; warm slightly before serving.
  • This recipe pairs beautifully with sparkling wine or crisp white wine.
