4 medium sweet potatoes
Turkey Taco Mixture:
1 tablespoon olive oil, 1 pound ground turkey, 1 small onion (diced), 2 cloves garlic (minced), 1 tablespoon chili powder, 1 teaspoon ground cumin, 1/2 teaspoon smoked paprika, 1/2 teaspoon salt, 1/4 teaspoon black pepper, 1/4 cup tomato sauce or salsa, 1/4 cup water
Toppings:
1/2 cup shredded cheddar cheese (optional), diced avocado, chopped cilantro, and lime wedges for serving
Instructions
- Preheat oven: Preheat oven to 400°F. Wash and pierce sweet potatoes, then bake for 45–50 minutes until tender.
