- 1 pound ground turkey
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 medium sweet potatoes, peeled and diced into small cubes
- 1 red bell pepper, diced
- 1 teaspoon paprika
- 1/2 teaspoon ground cumin
- 1/2 teaspoon chili powder
- Salt and pepper to taste
- 1/4 cup low-sodium chicken broth or water
- 2 cups fresh spinach, chopped
- Chopped parsley for garnish (optional)
Instructions
- Heat olive oil in a large skillet over medium heat. Add the ground turkey and cook until browned, breaking it up with a spoon as it cooks.
- Add the diced onion and garlic and sauté for 2 to 3 minutes until softened.
- Stir in the sweet potatoes, bell pepper, paprika, cumin, chili powder, salt, and pepper. Pour in the chicken broth or water, cover the skillet, and reduce heat to medium-low.
- Cook for 10 to 12 minutes, or until the sweet potatoes are tender, stirring occasionally.
- Uncover, stir in the chopped spinach, and cook for another 2 to 3 minutes until wilted.
- Remove from heat and garnish with chopped parsley if desired. Serve hot.

- For added flavor, sprinkle with shredded cheese or a squeeze of lime juice before serving.
