  • 1 pound ground turkey
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 medium sweet potatoes, peeled and diced into small cubes
  • 1 red bell pepper, diced
  • 1 teaspoon paprika
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • Salt and pepper to taste
  • 1/4 cup low-sodium chicken broth or water
  • 2 cups fresh spinach, chopped
  • Chopped parsley for garnish (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add the ground turkey and cook until browned, breaking it up with a spoon as it cooks.
  2. Add the diced onion and garlic and sauté for 2 to 3 minutes until softened.
  3. Stir in the sweet potatoes, bell pepper, paprika, cumin, chili powder, salt, and pepper. Pour in the chicken broth or water, cover the skillet, and reduce heat to medium-low.
  4. Cook for 10 to 12 minutes, or until the sweet potatoes are tender, stirring occasionally.
  5. Uncover, stir in the chopped spinach, and cook for another 2 to 3 minutes until wilted.
  6. Remove from heat and garnish with chopped parsley if desired. Serve hot.
