Description

Chicken and Seasonings:

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Vegetables and Fruits:

  • 1 red bell pepper, diced
  • 1 cup diced fresh pineapple (or canned pineapple tidbits, drained)
  • 2 cloves garlic, minced

Rice and Liquids:

  • 1 cup uncooked jasmine rice
  • 1 1/2 cups chicken broth
  • 1/2 cup coconut milk
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1/2 teaspoon ground ginger

Garnish:

  • 2 green onions, sliced
  • 2 tablespoons chopped fresh cilantro

Instructions

  1. Prepare the Chicken: Heat olive oil in a large skillet over medium-high heat. Season chicken with salt and pepper, then add to the skillet. Cook for 4–5 minutes until lightly browned.
  2. Add Vegetables and Rice: Add bell pepper, pineapple, and garlic to the skillet; cook for 2 minutes. Stir in rice, chicken broth, coconut milk, soy sauce, honey, and ginger.
  3. Simmer: Bring to a boil, then reduce heat to low, cover, and simmer for 18–20 minutes until rice is tender and liquid is absorbed.
  4. Finish and Serve: Remove from heat, fluff rice with a fork, and garnish with green onions and cilantro before serving.

Notes

  • For extra tropical flavor, sprinkle toasted coconut flakes on top before serving.
  • This dish works well with chicken thighs or shrimp as a variation.
