Tuna Salad
- 2 (5 oz) cans of tuna, drained
- 1 medium onion, chopped
- 1/2 stalk of celery, chopped
- 1 garlic clove, minced
- 1 tablespoon fresh parsley, chopped
- 3–4 tablespoons mayonnaise
- 3 tablespoons extra virgin olive oil, divided
- 1/3 cup shredded mozzarella cheese
- Salt and pepper, to taste
For the Sandwich
- Bread, sliced (your choice)
- Butter, softened (for spreading)
Instructions
- Prepare the Tuna Salad: Drain the water from the tuna cans and place the tuna in a medium bowl. Add the chopped onion, celery, garlic, parsley, mayonnaise, 2 tablespoons of olive oil, and shredded mozzarella cheese. Mix everything until well combined. Season with salt and pepper to taste.
- Heat the Skillet and Prepare Bread: Heat a non-stick skillet over medium heat and add 1 tablespoon of olive oil. Spread softened butter on one side of each bread slice, then place the bread slices butter-side down in the skillet to toast.
- Assemble the Sandwich: While the bread is toasting, scoop about 2 tablespoons of the tuna salad mixture onto one slice of bread in the skillet. Butter another slice of bread on one side and place it butter-side up on top of the tuna salad to form a sandwich.
- Grill the Sandwich: Once the bottom slice is golden brown, carefully flip the sandwich. Grill the other side until it is also golden and crispy, about 2-3 minutes.
- Serve: Remove the sandwich from the skillet. Let it sit for a moment to settle, then slice and serve hot.
