Description

This Teriyaki Chicken Casserole is a delicious and easy-to-make Asian-inspired dish featuring tender chicken, vibrant vegetables, and flavorful teriyaki sauce baked over a bed of rice. Perfect for meal prep or a comforting family dinner, it combines wholesome ingredients with a savory glaze for a balanced and satisfying meal.

Ingredients

Scale

Protein

  • 1 ½ lbs boneless, skinless chicken breasts or thighs

Vegetables

  • 2 cups broccoli florets
  • 1 cup shredded carrots
  • 1 red bell pepper, thinly sliced
  • 2 green onions, chopped (for garnish)

Base

  • 4 cups cooked white or brown rice

Seasonings and Sauce

  • 1 cup teriyaki sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon garlic powder
  • 1 teaspoon ground ginger
  • 1 tablespoon sesame seeds (optional)

Instructions

  1. Preheat and prepare dish: Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish to prevent sticking during baking.
  2. Cook the chicken: Heat a skillet over medium heat and cook the chicken breasts or thighs until browned on both sides and fully cooked through, about 5–6 minutes per side. Once done, remove from heat and let the chicken rest for a few minutes before dicing or shredding it into bite-sized pieces.
  3. Mix ingredients: In a large bowl, combine the cooked rice, broccoli florets, shredded carrots, thinly sliced red bell pepper, garlic powder, ground ginger, sesame oil, and half of the teriyaki sauce. Stir well to evenly distribute the flavors. Then, fold in the chopped chicken to incorporate all components.
  4. Assemble casserole: Pour the mixture into the prepared baking dish and spread it out evenly. Drizzle the remaining teriyaki sauce on top to add extra flavor and moisture to the casserole.
  5. Bake covered: Cover the baking dish tightly with aluminum foil and bake in the preheated oven for 20–25 minutes, or until the casserole is heated through and the vegetables become tender.
  6. Bake uncovered (optional): Remove the foil and bake for an additional 5 minutes if you prefer a slightly crispier top layer.
  7. Garnish and serve: Once baked, sprinkle chopped green onions and sesame seeds (if using) on top as a fresh and crunchy garnish. Serve warm.

Notes

  • Frozen vegetables can be substituted; just thaw and drain them before mixing.
  • For enhanced flavor, marinate the chicken in teriyaki sauce prior to cooking.
  • This casserole is excellent for meal prep and reheats very well, making it convenient for busy days.
