Taco Filling

  • 1 tablespoon olive oil
  • 1 lb ground beef (or turkey)
  • 1 tablespoon taco seasoning
  • 1/2 cup canned black beans, drained and rinsed
  • 1/2 cup corn kernels (optional)
  • 1/4 cup water

Toppings

  • Shredded cheese

  • Sliced avocado or guacamole
  • Sour cream or Greek yogurt
  • Chopped cilantro
  • Jalapeño slices

Instructions

  1. Roast the sweet potatoes: Preheat your oven to 400°F (200°C). Prick each sweet potato several times with a fork to allow steam to escape during roasting. Rub them with olive oil and season with salt and pepper. Place the potatoes on a baking sheet and roast for 45 to 50 minutes, or until they are tender when pierced with a fork.
  2. Prepare the taco filling: While the sweet potatoes roast, heat olive oil in a skillet over medium heat. Add the ground beef and cook until browned, making sure to break it up as it cooks. Drain any excess fat. Stir in the taco seasoning, black beans, corn kernels if using, and water. Let the mixture simmer for 5 to 7 minutes until the sauce thickens and the flavors meld.
  3. Assemble the stuffed potatoes: Once the sweet potatoes are cooked through, slice each one open lengthwise. Gently mash the inside flesh with a fork to create a soft bed for the filling. Spoon the warm taco mixture evenly into each sweet potato.
  4. Add toppings: Top each stuffed potato with shredded cheese, diced tomatoes, sliced avocado or guacamole, sour cream or Greek yogurt, chopped cilantro, jalapeño slices, and a squeeze of fresh lime juice according to your taste preferences.
