For the casserole:
- 1 pound ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 packet taco seasoning
- 1/4 cup water
- 1 can (15 ounces) black beans, drained and rinsed
- 1 can (10 ounces) diced tomatoes with green chiles
- 1 cup corn kernels (fresh, frozen, or canned)
- 6 small flour or corn tortillas, cut into quarters
- 2 cups shredded cheddar cheese
- 1/2 cup sour cream
- Fresh cilantro and sliced green onions for garnish (optional)
Instructions
- Preheat the oven: Preheat the oven to 375°F.
- Cook the beef: In a large skillet over medium heat, cook the ground beef and diced onion until the beef is browned and the onion is tender. Add garlic and cook for 1 minute. Drain excess fat if needed.
- Season the beef: Stir in taco seasoning and water, cooking until thickened, about 2 minutes.
- Add ingredients: Add black beans, diced tomatoes with green chiles, and corn. Simmer for 5 minutes.
- Layer the casserole: In a greased 9×13-inch baking dish, layer half of the tortilla pieces, followed by half of the beef mixture, then a layer of sour cream, and half of the shredded cheese. Repeat the layers once more.
- Bake: Cover with foil and bake for 20 minutes. Uncover and bake for another 10 minutes, or until the cheese is bubbly and slightly golden.
- Garnish and serve: Garnish with cilantro and green onions if desired.
