For the casserole:

  • 1 pound ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 1/4 cup water
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (10 ounces) diced tomatoes with green chiles
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 6 small flour or corn tortillas, cut into quarters
  • 2 cups shredded cheddar cheese
  • 1/2 cup sour cream
  • Fresh cilantro and sliced green onions for garnish (optional)

Instructions

  1. Preheat the oven: Preheat the oven to 375°F.
  2. Cook the beef: In a large skillet over medium heat, cook the ground beef and diced onion until the beef is browned and the onion is tender. Add garlic and cook for 1 minute. Drain excess fat if needed.
  3. Season the beef: Stir in taco seasoning and water, cooking until thickened, about 2 minutes.
  4. Add ingredients: Add black beans, diced tomatoes with green chiles, and corn. Simmer for 5 minutes.
  5. Layer the casserole: In a greased 9×13-inch baking dish, layer half of the tortilla pieces, followed by half of the beef mixture, then a layer of sour cream, and half of the shredded cheese. Repeat the layers once more.
  6. Bake: Cover with foil and bake for 20 minutes. Uncover and bake for another 10 minutes, or until the cheese is bubbly and slightly golden.
  7. Garnish and serve: Garnish with cilantro and green onions if desired.

Notes

  • You can use ground turkey or chicken instead of beef.
