- Prepare Strawberry Powder: Place the freeze-dried strawberries in a food processor and pulse until they form a fine powder. Set aside 1 tablespoon for garnish or coating, if desired.
- Mix Cream Cheese Base: In a medium bowl, beat the softened cream cheese until smooth. Add the strawberry powder, vanilla extract, and pinch of salt, mixing until fully combined.
- Melt White Chocolate: Melt 1 cup of the white chocolate chips in a microwave-safe bowl in 30-second intervals, stirring between each, until smooth. Let cool slightly.
- Combine Mixture: Stir the melted white chocolate into the cream cheese mixture until smooth and thick.
- Chill Mixture: Refrigerate the mixture for at least 1 hour or until firm enough to scoop.
- Form Truffles: Once chilled, scoop out small portions and roll into 1-inch balls. Place the balls on a parchment-lined baking sheet and freeze for 15–20 minutes.
- Coat Truffles: Melt the remaining 1/2 cup white chocolate until smooth. Dip each truffle into the melted chocolate to coat, then place back on the baking sheet.
- Add Garnish: Sprinkle the dipped truffles with reserved strawberry powder or sanding sugar before the chocolate coating sets.
