Description

This Sweet Potato Spinach Bake is a hearty and nutritious vegetarian casserole perfect for breakfast, brunch, or a light main course. Featuring layers of thinly sliced sweet potatoes, sautéed spinach, and a rich egg and cheese mixture, this gluten-free dish combines comforting flavors with wholesome ingredients for a deliciously satisfying meal.

Ingredients

Scale

Vegetables & Aromatics

  • 2 medium sweet potatoes, peeled and thinly sliced
  • 1 small yellow onion, diced
  • 3 cloves garlic, minced
  • 5 cups fresh spinach

Egg Mixture

  • 4 large eggs
  • 1/2 cup milk (dairy or plant-based)
  • 1/4 teaspoon ground nutmeg
  • Salt and freshly ground black pepper to taste

Cheese

  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese

Other

  • 1 tablespoon olive oil
  • Cooking spray or additional olive oil for greasing

Instructions

  1. Preheat Oven and Prepare Dish: Preheat your oven to 375°F (190°C) and grease a medium baking dish with cooking spray or olive oil to prevent sticking.
  2. Sauté Aromatics and Spinach: Heat olive oil in a skillet over medium heat. Add diced onion and sauté until softened, about 5 minutes. Add minced garlic and cook for an additional 1 minute until fragrant. Stir in fresh spinach and cook until wilted. Remove from heat and set aside to cool slightly.
  3. Mix Eggs and Cheese: In a large bowl, whisk together the eggs, milk, ground nutmeg, salt, and black pepper until combined. Stir in shredded mozzarella and grated Parmesan cheese to create a rich egg mixture.
  4. Assemble Layers: Layer half of the thinly sliced sweet potatoes evenly in the bottom of the prepared baking dish. Spread the sautéed spinach mixture evenly over the potatoes. Then layer the remaining sweet potato slices on top of the spinach.
  5. Pour Egg Mixture and Bake: Pour the egg and cheese mixture over the layered ingredients, gently pressing to ensure the mixture covers all layers. Cover the baking dish with foil and bake for 30 minutes.
  6. Finish Baking Uncovered: Remove the foil and continue baking for an additional 15 to 20 minutes, or until the top is golden brown and the center is set.
  7. Rest and Serve: Let the bake rest for 10 minutes after removing from the oven. Slice and serve warm for a delicious, nutritious meal.
