Instructions

- Sauté Vegetables: In the same pan, add the chopped onions and bell peppers. Cook for 3–4 minutes, stirring occasionally, until softened and fragrant.
- Add Potatoes and Seasonings: Add the cubed red potatoes to the pan along with garlic powder, Cajun seasoning, salt, and black pepper. Stir well to evenly coat the potatoes with the seasonings.
- Simmer Potatoes: Pour about 1/4 cup of water into the pan. Cover and cook over medium-low heat for 20–25 minutes, stirring occasionally. The potatoes should become tender during this time. If the mixture begins to dry out, add more water in small increments as needed.
- Combine and Crisp: Return the browned sausage to the pan and stir to combine everything. Continue cooking uncovered for an additional 5–10 minutes, allowing the bottom to brown and become slightly crispy.
- Garnish and Serve: Remove from heat and garnish with chopped green onions or parsley if desired. Serve hot, ideal alongside cornbread or grilled meats.
