Salmon Pinwheels

  • 1.5 lbs salmon fillet (skinless, center-cut)
  • 4 oz cream cheese (softened)
  • 1/2 cup cooked spinach (squeezed dry and chopped)
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons sun-dried tomatoes (chopped)
  • 1 garlic clove (minced)
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika
  • fresh parsley (chopped, for garnish)

Instructions

  1. Preheat Oven: Preheat the oven to 375°F (190°C) and line a baking dish with parchment paper to prepare for baking the salmon pinwheels.
  2. Prepare the Salmon: Lay the salmon fillet flat on a clean surface. Carefully slice it horizontally to create a thinner, even layer without cutting all the way through. Open the fillet like a book and gently flatten it to create a smooth surface for filling.
  3. Make the Filling: In a bowl, combine softened cream cheese, cooked and chopped spinach, grated Parmesan cheese, chopped sun-dried tomatoes, minced garlic, and fresh lemon juice. Mix thoroughly until well blended.
  4. Assemble the Pinwheels: Spread the prepared filling evenly over the flattened salmon fillet. Starting from the short end, roll the salmon tightly into a log shape. Secure the roll with toothpicks or kitchen twine to hold its shape.
  5. Slice and Season: Cut the rolled salmon into 1.5-inch thick pinwheels. Arrange the pinwheels cut-side up in the prepared baking dish. Drizzle with olive oil and sprinkle salt, black pepper, and paprika evenly over the top.
  6. Bake the Salmon: Bake in the preheated oven for 20 to 25 minutes, or until the salmon is fully cooked and flakes easily when tested with a fork.
