  • 1/3 cup milk
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Prepare Strawberry Puree: In a blender or food processor, puree the strawberries with 2 teaspoons of honey until smooth. Set aside this vibrant, sweet strawberry mixture for layering.
  2. Make Cheesecake Mixture: In a mixing bowl, beat the softened cream cheese until smooth using a hand or stand mixer. Add the Greek yogurt, milk, 1/4 cup honey or maple syrup, vanilla extract, and a pinch of salt. Whisk or blend everything together until completely smooth and creamy to form the cheesecake base.
  3. Assemble Ice Pops: Spoon a layer of cheesecake mixture into the ice pop molds, then add a spoonful of the strawberry puree on top. Alternate layers until the molds are full. Use a skewer or knife to gently swirl the two mixtures together to create a beautiful marbled effect.
  4. Freeze: Insert ice pop sticks into the molds and freeze for at least 6 hours or preferably overnight, allowing the pops to fully set and firm up.
