For the crust:
- 1½ cups Golden Oreo crumbs (about 18 cookies, finely crushed)
- ¼ cup unsalted butter (melted)
For the cheesecake layer:
- 24 oz cream cheese (softened)
- 1 cup granulated sugar
- ¾ cup sour cream
- 1 teaspoon vanilla extract
- 3 large eggs
For the strawberry cake layers:
- 1 box strawberry cake mix (plus ingredients listed on the box: usually eggs, oil, and water)
For the strawberry crunch topping:
- 10 Golden Oreos (crushed)
- ¼ cup freeze-dried strawberries (crushed)
- 2 tablespoons unsalted butter (melted)
For the frosting (optional):
- 1½ cups heavy whipping cream
- ¼ cup powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Make the crust: Preheat oven to 325°F (163°C). Grease and line the bottom of a 9-inch springform pan with parchment paper. In a bowl, mix Golden Oreo crumbs with melted butter until fully combined. Press into the bottom of the pan. Bake for 10 minutes, then let cool.
- Make the cheesecake: In a large bowl, beat cream cheese and sugar until smooth. Add sour cream and vanilla extract; mix well. Beat in the eggs one at a time just until combined. Pour the filling over the cooled crust. Bake at 325°F for 50–60 minutes, or until the center is just set. Turn off the oven, crack the door, and let the cheesecake cool for 1 hour. Chill in the fridge for at least 4 hours or overnight.
- Make the strawberry cake layers: Prepare the strawberry cake mix according to package instructions. Divide into two 9-inch round pans and bake as directed. Let cool completely.
- Make the crunch topping: In a bowl, mix crushed Oreos, crushed freeze-dried strawberries, and melted butter until crumbly. Set aside.
- Assemble the cake: Place one strawberry cake layer on a serving plate. Add a thin layer of whipped cream or frosting. Carefully place the cheesecake layer on top, then add the second strawberry cake layer.
- Frost and decorate: Frost the top and sides with whipped cream or frosting. Press the strawberry crunch topping onto the sides and top. Chill for 1 hour before slicing for clean layers.
