Beef Marinade
- 8 ounces beef sirloin, thinly sliced against the grain

Stir-Fry
- 1 tablespoon vegetable oil
- 1 cup Chinese yam, peeled and cut into thin matchsticks
- 1/2 red bell pepper, thinly sliced
- 2 green onions, cut into 1-inch pieces
- 2 garlic cloves, minced
- 1 teaspoon ginger, minced
Sauce & Seasoning
- 1 tablespoon oyster sauce
- 1 tablespoon soy sauce
- 1 tablespoon Shaoxing wine (or dry sherry)
- Salt and pepper to taste
Instructions
- Marinate the Beef: In a bowl, toss the thinly sliced beef sirloin with 1 tablespoon soy sauce, 1 teaspoon cornstarch, and 1/2 teaspoon sesame oil. Let it marinate for 15–20 minutes to tenderize and infuse flavor.
- Heat the Pan and Cook Beef: Heat 1 tablespoon vegetable oil in a wok or large skillet over medium-high heat. Add the marinated beef and stir-fry until browned yet not fully cooked through. Remove the beef from the pan and set aside to prevent overcooking.
- Sauté Aromatics: In the same pan, add the minced garlic, minced ginger, and green onion pieces. Stir-fry for about 30 seconds until fragrant and aromatic.
- Cook Vegetables: Add the peeled and matchstick-cut Chinese yam along with the sliced red bell pepper to the pan. Stir-fry for 2–3 minutes until they become slightly tender while retaining a crisp texture.
- Combine and Season: Return the partially cooked beef to the pan. Stir in 1 tablespoon oyster sauce, 1 tablespoon soy sauce, and 1 tablespoon Shaoxing wine. Stir-fry everything together for another 1–2 minutes until the beef is fully cooked and the sauce evenly coats the ingredients.
- Final Seasoning and Serve: Season with salt and pepper to taste, toss once more, and serve hot alongside steamed rice for a complete meal.
Notes
- Wear gloves when handling raw Chinese yam to avoid skin irritation.
- If Chinese yam is unavailable, substitute with parsnip or daikon radish for a similar texture.
- Add a splash of water or broth if the stir-fry mixture becomes too dry during cooking.
