Description

Sticky Beef Noodles is a flavorful and satisfying stir-fry dish combining tender marinated beef, crisp vegetables, and chewy noodles coated in a savory, sweet, and tangy sauce. Perfect for a quick weeknight meal, this recipe delivers an irresistible mix of textures and bold Asian-inspired flavors in just 30 minutes.

Ingredients

Scale

Beef Marinade

  • 1 lb beef sirloin or flank steak, thinly sliced
  • 2 tbsp soy sauce
  • 1 tbsp cornstarch
  • 1 tbsp vegetable oil

Sauce

  • 3 tbsp soy sauce
  • 2 tbsp oyster sauce
  • 1 tbsp hoisin sauce
  • 1 tbsp sugar
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 3 cloves garlic, minced
  • 1 tsp fresh ginger, minced

Main

  • 8 oz egg noodles or rice noodles
  • 1 bell pepper, sliced
  • 1 cup broccoli florets
  • 2 green onions, chopped (for garnish)
  • 1 tbsp sesame seeds (for garnish)
  • 1 tbsp vegetable oil (for stir-frying)

Instructions

  1. Marinate the Beef: In a bowl, toss the thinly sliced beef with 2 tablespoons soy sauce, 1 tablespoon cornstarch, and 1 tablespoon vegetable oil. This step tenderizes the beef and helps the sauce adhere during cooking.
  2. Let it Rest: Allow the beef to marinate for 15 to 30 minutes to absorb the flavors and improve texture.
  3. Prepare the Sauce: In a small bowl, whisk together 3 tablespoons soy sauce, 2 tablespoons oyster sauce, 1 tablespoon hoisin sauce, 1 tablespoon sugar, 1 tablespoon rice vinegar, 1 teaspoon sesame oil, minced garlic, and minced ginger until well combined.
  4. Cook the Noodles: Prepare the egg or rice noodles according to package instructions, then drain and toss with a little oil to prevent sticking.
  5. Stir-Fry the Beef: Heat 1 tablespoon vegetable oil in a large skillet or wok over medium-high heat. Add the marinated beef and stir-fry for 2 to 3 minutes until browned and just cooked through. Remove from the skillet and set aside.
  6. Stir-Fry the Vegetables: In the same skillet, add the sliced bell pepper and broccoli florets. Stir-fry for 3 to 4 minutes until the vegetables are tender-crisp, maintaining a slight crunch.
  7. Combine and Sauce: Return the beef to the skillet with the vegetables, pour in the prepared sauce, and stir-fry for 2 minutes until the sauce thickens and coats all ingredients evenly.
  8. Toss with Noodles: Add the cooked noodles to the skillet and toss everything together until well coated and heated through.
  9. Serve and Garnish: Serve the sticky beef noodles hot, garnished with chopped green onions and a sprinkle of sesame seeds for an extra nutty flavor and crunch.

Notes

  • For a gluten-free version, use tamari instead of soy sauce and ensure oyster sauce is gluten-free.
  • Vegetables can be varied based on preference—snap peas, carrots, or mushrooms work well.
  • To enhance the dish, add a pinch of red pepper flakes or a dash of chili oil for some heat.
  • If using rice noodles, soak them properly to avoid clumping and breakage.
  • Marinating the beef for longer (up to 1 hour) will yield more tender meat.
