Instructions
- Brown the Sausage: Heat olive oil in a large pot over medium-high heat. Add the spicy Italian sausage and cook, breaking it up with a spoon, until browned and cooked through, about 5–6 minutes.
- Sauté the Onion: Add diced yellow onion to the pot and sauté until softened and translucent, about 3 minutes, stirring occasionally.
- Add Garlic and Spices: Stir in minced garlic, red pepper flakes (if using), dried Italian seasoning, and black pepper. Cook for about 1 minute until fragrant.
- Combine Broth and Tomatoes: Pour in the chicken broth and diced tomatoes with their juices. Bring the mixture to a boil.
- Simmer the Soup Base: Reduce heat to a simmer and cook uncovered for 10 minutes to allow flavors to meld.
- Add Cream and Tortellini: Stir in the heavy cream and add the refrigerated cheese tortellini. Continue simmering for 5–7 minutes until the tortellini are tender and cooked through.
- Finish with Spinach and Season: Add the chopped spinach and cook for another 1–2 minutes until wilted. Taste the soup and adjust salt as needed.
- Serve: Ladle soup into bowls and top with grated Parmesan cheese. Serve hot and enjoy.
