Description

A rich and flavorful Spicy Sausage and Tortellini Soup combining savory Italian sausage, tender cheese tortellini, fresh spinach, and a creamy broth with a hint of heat. Perfect for a comforting weeknight dinner with classic Italian-American flavors.

Ingredients

Scale

Main Ingredients

  • 1 tablespoon olive oil
  • 1 pound spicy Italian sausage, casings removed
  • 1 small yellow onion, diced
  • 3 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 teaspoon dried Italian seasoning
  • 1/4 teaspoon black pepper
  • 4 cups chicken broth
  • 1 (14.5 oz) can diced tomatoes
  • 1/2 cup heavy cream
  • 1 (9 oz) package refrigerated cheese tortellini
  • 2 cups fresh spinach, chopped
  • Salt to taste
  • Grated Parmesan cheese for serving

Instructions

  1. Brown the Sausage: Heat olive oil in a large pot over medium-high heat. Add the spicy Italian sausage and cook, breaking it up with a spoon, until browned and cooked through, about 5–6 minutes.
  2. Sauté the Onion: Add diced yellow onion to the pot and sauté until softened and translucent, about 3 minutes, stirring occasionally.
  3. Add Garlic and Spices: Stir in minced garlic, red pepper flakes (if using), dried Italian seasoning, and black pepper. Cook for about 1 minute until fragrant.
  4. Combine Broth and Tomatoes: Pour in the chicken broth and diced tomatoes with their juices. Bring the mixture to a boil.
  5. Simmer the Soup Base: Reduce heat to a simmer and cook uncovered for 10 minutes to allow flavors to meld.
  6. Add Cream and Tortellini: Stir in the heavy cream and add the refrigerated cheese tortellini. Continue simmering for 5–7 minutes until the tortellini are tender and cooked through.
  7. Finish with Spinach and Season: Add the chopped spinach and cook for another 1–2 minutes until wilted. Taste the soup and adjust salt as needed.
  8. Serve: Ladle soup into bowls and top with grated Parmesan cheese. Serve hot and enjoy.

Notes

  • For a milder flavor, substitute spicy Italian sausage with sweet Italian sausage.
  • Kale can be used instead of spinach for a heartier green option.
  • Be careful not to overcook the tortellini to prevent them from becoming mushy.
  • This soup can be stored in the refrigerator for up to 3 days and reheated gently on the stove.
