Instructions
- Prepare Noodles: Cook the noodles according to package instructions until just tender, then drain and rinse under cold water to stop cooking. Set aside.
- Make Sauce: In a small bowl, whisk together the soy sauce, dark soy sauce, oyster sauce, sesame oil, sugar, and white pepper until combined.
- Sauté Aromatics: Heat vegetable oil in a large skillet or wok over medium-high heat. Add the minced garlic and sliced green onions, sautéing for about 30 seconds until fragrant but not browned.
- Pan-Fry Noodles: Add the cooked noodles to the pan and spread them out evenly. Let them cook undisturbed for 2 to 3 minutes to develop a crispy bottom layer.
- Toss and Continue Cooking: Toss the noodles and continue cooking for another 2 to 3 minutes, stirring occasionally to evenly cook and crisp the noodles.
- Add Sauce: Pour the prepared sauce over the noodles and toss thoroughly until the noodles are evenly coated and heated through.
- Caramelize & Serve: Continue cooking for 1 more minute to allow the noodles to caramelize slightly. Serve hot, garnished with extra green onions and optional crunchy vegetables if desired.
