Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Prepare the dough: In a large bowl, beat butter, 1 cup granulated sugar, and brown sugar until light and fluffy. Beat in eggs and vanilla until combined. In a separate bowl, whisk together flour, cream of tartar, baking soda, salt, and 1 teaspoon cinnamon. Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
  3. Coat the dough: In a small bowl, mix the remaining 1/2 cup granulated sugar with the remaining 1 teaspoon cinnamon. Roll the dough into 1 1/2-inch balls and coat in the cinnamon sugar mixture.
  4. Bake the cookies: Place the coated dough on the prepared baking sheets about 2 inches apart. Bake for 9–11 minutes, or until the edges are set but the centers still look slightly soft.
  5. Cool and serve: Let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
