Cookie Dough:
- 1 cup unsalted butter, softened
- 1 1/2 cups granulated sugar, divided

- 2 large eggs

- 1 teaspoon baking soda
- 1/2 teaspoon salt

Cinnamon Sugar Coating:
- 1/2 cup granulated sugar
- 1 teaspoon ground cinnamon
Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
- Prepare the dough: In a large bowl, beat butter, 1 cup granulated sugar, and brown sugar until light and fluffy. Beat in eggs and vanilla until combined. In a separate bowl, whisk together flour, cream of tartar, baking soda, salt, and 1 teaspoon cinnamon. Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
- Coat the dough: In a small bowl, mix the remaining 1/2 cup granulated sugar with the remaining 1 teaspoon cinnamon. Roll the dough into 1 1/2-inch balls and coat in the cinnamon sugar mixture.
- Bake the cookies: Place the coated dough on the prepared baking sheets about 2 inches apart. Bake for 9–11 minutes, or until the edges are set but the centers still look slightly soft.
- Cool and serve: Let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
Notes
- For an extra churro-like texture, sprinkle additional cinnamon sugar on top of cookies right after baking.
- These cookies stay soft for days if stored in an airtight container.
