Instructions

- Add Vegetables: Add the diced onion, minced garlic, diced potatoes, sliced carrots, and chopped red bell pepper into the slow cooker with the sausage.
- Combine Liquids and Spices: Pour in the diced tomatoes, tomato paste, and low-sodium chicken broth. Stir in the dried thyme, smoked paprika, dried oregano, salt, and black pepper. Mix everything together until well combined.
- Slow Cook: Cover the slow cooker and cook on low for 6–7 hours or on high for 3–4 hours, until the vegetables are tender and the sauce has thickened.
- Finish and Garnish: Stir the casserole before serving and garnish with chopped fresh parsley for a fresh touch.
