Description

This Slow Cooker Peanut Chicken is a delicious and easy-to-make meal perfect for busy days. Tender chicken breasts cook slowly with a rich and flavorful peanut butter sauce infused with garlic, soy sauce, and lime juice, creating a savory and slightly spicy dish with a hint of sweetness and freshness from cilantro. Ideal for a comforting dinner served over rice or noodles.

Ingredients

Scale

Chicken and Vegetables

  • 1.5 lb chicken breasts
  • 1 red bell pepper, diced
  • 1/2 large yellow onion, diced
  • 2 garlic cloves, chopped

Peanut Sauce

  • 1/2 cup peanut butter (creamy or crunchy with minimal ingredients)
  • 1/2 cup chicken broth
  • 1/4 cup soy sauce
  • 1 tbsp honey
  • 1 tsp sesame oil
  • 1 tsp chili garlic paste

Finishing Touches

  • 1 tbsp lime juice
  • 2 tbsp cilantro, chopped

Instructions

  1. Prepare the Slow Cooker: Place the diced red bell pepper, diced onion, and chopped garlic at the bottom of your slow cooker to create a flavorful base.
  2. Add the Chicken: Lay the chicken breasts on top of the vegetables evenly.
  3. Make the Peanut Sauce: In a bowl or glass measuring cup, whisk together the peanut butter, chicken broth, soy sauce, honey, sesame oil, and chili garlic paste until the sauce is smooth and combined.
  4. Combine and Cook: Pour the peanut sauce over the chicken breasts and vegetables. Cover with the slow cooker lid and cook on HIGH for 2-3 hours or on LOW for 4-5 hours until the chicken is tender and fully cooked.
  5. Finish the Dish: Remove the slow cooker lid, stir in the lime juice and chopped cilantro to add brightness and fresh flavor. Serve hot and enjoy your meal.

Notes

  • For a thicker sauce, remove the chicken breasts after cooking, and simmer the sauce on the stovetop for a few minutes to reduce it before serving.
  • You can serve this peanut chicken over steamed rice, quinoa, or noodles for a complete meal.
  • Adjust the chili garlic paste to your preferred spice level or omit it for a milder version.
  • Use crunchy peanut butter for added texture but ensure it has minimal ingredients for cleaner flavor.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
