Cake:
- 1 cup all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsweetened cocoa powder
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup milk
- 1/3 cup vegetable oil
- 1 teaspoon vanilla extract
- 1/2 cup mini chocolate chips
For the topping:
- 1/2 cup brown sugar
- 1/4 cup unsweetened cocoa powder
- 1 1/2 cups hot water
Instructions
- Prepare the Cake Batter: Lightly grease the insert of a 4- to 6-quart slow cooker. In a large bowl, whisk together the flour, granulated sugar, cocoa powder, baking powder, and salt. Add the milk, oil, and vanilla extract. Stir until just combined, then fold in the mini chocolate chips. Spread the batter evenly in the bottom of the slow cooker.
- Make the Topping: In a separate bowl, mix the brown sugar and cocoa powder for the topping, then sprinkle it evenly over the batter. Carefully pour the hot water over the top without stirring.
- Cook the Cake: Cover and cook on high for 2 to 2.5 hours, or until the top looks set and a gooey chocolate sauce forms underneath. Turn off the slow cooker and let sit uncovered for 15 minutes before serving.
- Serve: Spoon the warm cake into bowls, making sure to get some of the sauce from the bottom. Serve with whipped cream or vanilla ice cream.
Notes
- Every slow cooker heats a little differently, so check at the 2-hour mark to avoid overcooking.
- For a richer flavor, add a teaspoon of espresso powder to the batter.
