For the fritters:
- 3 ripe bananas (mashed)
- 1 cup all-purpose flour
- 2 tablespoons granulated sugar
- 1 teaspoon baking powder
- ½ teaspoon ground cinnamon
- ¼ teaspoon salt
- 1 large egg
- ¼ cup milk
- 1 teaspoon vanilla extract
- Vegetable oil (for frying)
For serving:
- Powdered sugar or honey (optional)
Instructions
- In a large bowl, combine the mashed bananas, egg, milk, and vanilla extract. In a separate bowl, whisk together the flour, sugar, baking powder, cinnamon, and salt. Add the dry ingredients to the banana mixture and stir until just combined.
- Heat about ¼ inch of vegetable oil in a large skillet over medium heat. Once hot, drop spoonfuls of the batter into the skillet, flattening slightly with the back of the spoon. Fry for 2–3 minutes per side, or until golden brown and cooked through.
- Remove and drain on paper towels. Serve warm, dusted with powdered sugar or drizzled with honey if desired.
Notes
- For crispier fritters, make sure the oil is properly heated before frying.
- You can add a handful of chopped walnuts or mini chocolate chips to the batter for extra texture.
