Shrimp Stuffing:

  • 1/2 pound raw shrimp (peeled, deveined, and finely chopped)
  • 2 tablespoons butter
  • 2 garlic cloves (minced)
  • 1/4 cup finely diced red bell pepper
  • 1/4 cup chopped green onions
  • 1/2 teaspoon Old Bay seasoning
  • 1/4 teaspoon paprika
  • 4 oz cream cheese (softened)
  • 1/4 cup shredded mozzarella cheese
  • 2 tablespoons grated Parmesan cheese
  • 1 tablespoon lemon juice
  • 1 tablespoon chopped fresh parsley

Instructions

  1. Preheat oven: Preheat oven to 400°F (200°C).
  2. Prepare salmon: Make a deep slit in each salmon fillet, drizzle with olive oil, season with salt and pepper.
  3. Make shrimp stuffing: Sauté garlic, bell pepper, green onions, add shrimp, Old Bay, paprika, cook until pink. Stir in cream cheese, mozzarella, Parmesan, lemon juice, parsley.
