Description

This Shrimp and Salmon Alfredo is a creamy, luxurious pasta dish combining tender seafood with a rich, tangy Alfredo sauce made with Greek yogurt and Parmesan cheese. Perfect for a quick yet elegant dinner, it brings together the flavors of baked salmon, succulent shrimp, and perfectly cooked fettuccine, garnished with fresh dill and black pepper.

Ingredients

Scale

Pasta

  • 12 oz dried fettuccine noodles

Seafood

  • 10 oz salmon fillet
  • 1 lb shrimp

Sauce

  • 1/2 cup freshly grated Parmesan cheese
  • 2 tbsp butter
  • 1/2 cup Greek yogurt
  • 1 tsp garlic powder
  • 1/2 cup grated Parmesan cheese (for sauce)
  • 1 tbsp fresh dill, chopped

Seasoning and Garnish

  • Salt, to taste
  • Black pepper, to taste
  • Olive oil, for rubbing on salmon and shrimp

Instructions

  1. Cook Pasta: Bring a large pot of salted water to a boil and cook the fettuccine noodles according to package instructions until al dente, about 8-10 minutes. Reserve one cup of the pasta cooking water, then drain the pasta and set aside.
  2. Prepare Seafood: Preheat the oven to 400°F (200°C). Rub the salmon fillet and shrimp with olive oil and season with salt and pepper.
  3. Bake Seafood: Place the salmon on a baking sheet and bake for 10 minutes. Then add the shrimp to the baking sheet and continue cooking both for an additional 10 minutes until the salmon flakes easily and shrimp are opaque. Alternatively, use an air fryer: cook the salmon for 7 minutes, add shrimp, and cook for 7 more minutes. Remove and set aside.
  4. Make Alfredo Sauce: In a large skillet over medium heat, melt butter. Whisk in Greek yogurt and garlic powder until smooth.
  5. Add Cheese: Stir in Parmesan cheese and whisk continuously until melted and the sauce is creamy.
  6. Adjust Sauce Consistency: Slowly add the reserved pasta water, one tablespoon at a time, whisking constantly until the sauce reaches desired thickness—thick enough to coat the back of a spoon.
  7. Toss Pasta in Sauce: Add the drained pasta to the skillet and gently toss using tongs to coat evenly with the Alfredo sauce.
  8. Combine Seafood and Pasta: Gently fold in the cooked salmon and shrimp, taking care not to break up the salmon too much.
  9. Garnish and Serve: Sprinkle with chopped fresh dill, additional black pepper, and extra Parmesan if desired. Serve immediately while warm.

Notes

  • For a lighter sauce, substitute half of the Greek yogurt with low-fat milk or cream.
  • You can use fresh or frozen seafood; if frozen, thaw completely before cooking.
  • Reserve some pasta water to help adjust sauce consistency without thinning too much.
  • If you prefer, shrimp can be sautéed in a skillet instead of baking or air frying.
  • Fresh dill adds a bright herbal flavor, but parsley can be substituted if unavailable.
