  • 1/2 small onion, finely chopped
  • 1 garlic clove, minced
  • 1/2 red bell pepper, diced
  • 1 cup crushed tomatoes (canned or fresh)
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon smoked paprika
  • 1/8 teaspoon chili flakes (optional)
  • Salt and black pepper, to taste

Additional Ingredients:

  • 2 large eggs
  • 2 slices crusty bread, toasted
  • 2 tablespoons crumbled feta cheese
  • 1 tablespoon chopped fresh parsley

Instructions

  1. Heat the Skillet: Heat olive oil in a skillet over medium heat.
  2. Sauté Onion: Add chopped onion and cook until softened.
  3. Add Ingredients: Add garlic, red bell pepper, crushed tomatoes, cumin, paprika, chili flakes, salt, and pepper. Simmer until slightly thickened.
  4. Add Eggs: Make wells in the sauce, crack eggs into them, cover, and cook until eggs are set.
  5. Toast Bread: While eggs cook, toast the bread.
  6. Assemble: Spoon shakshouka mixture and eggs over toasted bread. Top with feta and parsley.
  7. Serve: Serve immediately.
