Description

A delicious and comforting savory chicken and mushroom puff pastry delight featuring tender chicken breast, sautéed mushrooms, and a creamy thyme-infused sauce encased in golden, flaky puff pastry—perfect for an easy weeknight dinner or elegant appetizer.

Ingredients

Scale

Main Ingredients

  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 2 cups cooked chicken breast, shredded or diced
  • 1½ cups mushrooms, sliced
  • 1 tablespoon fresh thyme leaves or 1 teaspoon dried thyme
  • 2 tablespoons all-purpose flour
  • ¾ cup chicken broth
  • ½ cup heavy cream
  • Salt and black pepper, to taste
  • 1 sheet puff pastry, thawed
  • 1 egg, beaten (for egg wash)

Instructions

  1. Prepare the Filling: Heat olive oil in a large skillet over medium heat. Sauté the finely chopped onion until translucent, about 3 minutes. Add the minced garlic and cook for another 30 seconds until fragrant.
  2. Cook Mushrooms and Thyme: Stir in the sliced mushrooms and fresh or dried thyme leaves. Cook until the mushrooms release their moisture and begin to brown, about 5 to 7 minutes.
  3. Create the Sauce: Sprinkle the flour over the mushroom mixture and cook for 1 minute, stirring constantly to avoid lumps. Gradually pour in the chicken broth while stirring until the mixture thickens and is smooth.
  4. Add Cream and Chicken: Pour in the heavy cream and bring to a gentle simmer. Stir in the cooked chicken breast pieces. Season the filling with salt and black pepper according to your taste. Remove from heat and allow the mixture to cool slightly.
  5. Prepare Puff Pastry: On a lightly floured surface, roll out the thawed puff pastry sheet and cut it into four equal squares.
  6. Assemble Pastries: Spoon the chicken and mushroom filling into the center of each puff pastry square. Fold each square over to form triangles or rectangles, pressing the edges firmly to seal the filling inside.
  7. Apply Egg Wash: Brush the tops of the pastries with the beaten egg to achieve a beautiful golden-brown color during baking.
  8. Bake: Place the prepared pastries on a baking sheet lined with parchment paper. Bake them in a preheated oven at 400°F (200°C) for 18 to 22 minutes or until the puff pastry is puffed and golden brown.
  9. Serve: Let the pastries cool slightly on a wire rack before serving warm.

Notes

  • You can substitute turkey for chicken or use store-bought rotisserie chicken to save preparation time.
  • For a warm flavor boost, add a pinch of nutmeg to the filling mixture.
  • Add a bit of grated cheese inside each puff pastry before sealing for extra richness and flavor.
  • Ensure puff pastry is fully thawed before rolling to prevent cracking.
  • Leftover pastries can be refrigerated and reheated in the oven for best texture.
