Instructions

  1. Prepare the dough: In a large bowl, whisk together the flour and salt. Cut in the cold unsalted butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  2. Add ice water: Gradually add ice water, one tablespoon at a time, mixing until the dough comes together. Form the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes to chill.
  3. Cook scrambled eggs: Heat olive oil or butter in a small skillet over medium heat. Beat 3 eggs with salt, pepper, and chopped chives, then cook gently, stirring occasionally, until softly scrambled. Remove from heat and allow to cool slightly.
  4. Preheat oven: Set your oven to 375°F (190°C) and line a baking sheet with parchment paper to prepare for baking.
  5. Roll out dough: On a lightly floured surface, roll out the dough to about 1/8 inch thickness. Cut the dough into rectangles roughly 4 by 3 inches, making about 6 to 8 pieces.
  6. Assemble pop-tarts: Spoon the scrambled eggs onto half of the dough rectangles, then sprinkle shredded cheddar cheese on top while leaving a small border around the edges.
  7. Seal edges: Brush the edges of each filled rectangle with beaten egg wash. Place a plain rectangle over each filled one, pressing the edges firmly together with a fork to seal the pop-tarts.
