Instructions

  2. Sauté aromatics: Add diced onion and minced garlic to the pot with the sausage. Cook for an additional 2-3 minutes until fragrant and softened.
  3. Add vegetables: Stir in the sliced carrots and celery, cooking for 3-4 minutes to start softening them.
  4. Combine liquids and seasonings: Pour in the diced tomatoes with their juices, chicken broth, and cannellini beans. Sprinkle in dried oregano, basil, salt, and pepper. Stir well to combine.
  5. Simmer the soup: Bring the mixture to a boil, then reduce the heat to low and simmer uncovered for 20-25 minutes, or until the vegetables are tender.
