Instructions

  1. Preheat and Prepare: Preheat your oven to 375°F (190°C) and lightly grease a 9-inch pie dish or deep-dish skillet to prevent sticking during baking.
  2. Cook Sausage: In a large skillet over medium heat, cook the sausage until it is browned and fully cooked, breaking it into crumbles. Leave the fat in the pan for flavor and moisture.
  3. Make Gravy: Sprinkle the flour over the cooked sausage and stir well to coat. Cook for 1–2 minutes to cook out the raw flour taste. Gradually whisk in the whole milk, stirring constantly until the gravy thickens to a creamy consistency. Stir in salt, black pepper, garlic powder, and thyme if using. Remove from heat.
  4. Assemble Pie: Pour the sausage gravy evenly into the prepared pie dish. Cut each biscuit in half horizontally to make two thinner rounds and arrange them on top of the gravy, slightly overlapping as needed. Sprinkle shredded cheddar cheese over the biscuits if desired for added flavor and melty richness.
  5. Bake: Bake the assembled pie for 20–25 minutes or until the biscuits are golden brown and cooked through. If the tops start to brown too quickly, cover loosely with foil for the last 5–10 minutes of baking to prevent burning.
