- 1 tablespoon olive oil
- 1 pound smoked sausage (sliced into ¼-inch rounds)
- 1 small onion (diced)
- 1 green bell pepper (diced)
- 2 cloves garlic (minced)
- 1 teaspoon paprika
- ½ teaspoon dried thyme
- 1 cup long grain white rice
- 2 cups chicken broth
- 1 (14.5-ounce) can diced tomatoes (undrained)
- Salt and black pepper to taste
- Chopped parsley for garnish (optional)
Instructions
- Cook the Sausage: In a large skillet or sauté pan, heat olive oil over medium heat. Add sliced sausage and cook until browned, about 5–6 minutes. Remove sausage and set aside.
- Sauté Vegetables: In the same pan, add onion and bell pepper; cook until softened, about 3–4 minutes. Stir in garlic, paprika, and thyme; cook for 30 seconds.
- Add Rice and Liquid: Add rice to the pan, stir to coat with spices. Pour in chicken broth and diced tomatoes; stir to combine. Return sausage to the pan.
- Simmer: Bring to a boil, then reduce heat to low. Cover and simmer for 20–25 minutes until rice is tender and liquid is absorbed.
- Finish and Serve: Fluff with a fork, season with salt and pepper. Garnish with parsley if desired.
Notes
- You can use any variety of fully cooked sausage, such as kielbasa, andouille, or turkey sausage.
- Add hot sauce or red pepper flakes for a spicy kick.
- Brown rice can be used but will require additional liquid and longer cooking time.
