  • 1 tablespoon olive oil
  • 1 pound smoked sausage (sliced into ¼-inch rounds)
  • 1 small onion (diced)
  • 1 green bell pepper (diced)
  • 2 cloves garlic (minced)
  • 1 teaspoon paprika
  • ½ teaspoon dried thyme
  • 1 cup long grain white rice
  • 2 cups chicken broth
  • 1 (14.5-ounce) can diced tomatoes (undrained)
  • Salt and black pepper to taste
  • Chopped parsley for garnish (optional)

Instructions

  1. Cook the Sausage: In a large skillet or sauté pan, heat olive oil over medium heat. Add sliced sausage and cook until browned, about 5–6 minutes. Remove sausage and set aside.
  2. Sauté Vegetables: In the same pan, add onion and bell pepper; cook until softened, about 3–4 minutes. Stir in garlic, paprika, and thyme; cook for 30 seconds.
  3. Add Rice and Liquid: Add rice to the pan, stir to coat with spices. Pour in chicken broth and diced tomatoes; stir to combine. Return sausage to the pan.
  4. Simmer: Bring to a boil, then reduce heat to low. Cover and simmer for 20–25 minutes until rice is tender and liquid is absorbed.
  5. Finish and Serve: Fluff with a fork, season with salt and pepper. Garnish with parsley if desired.

Notes

  • You can use any variety of fully cooked sausage, such as kielbasa, andouille, or turkey sausage.
  • Add hot sauce or red pepper flakes for a spicy kick.
  • Brown rice can be used but will require additional liquid and longer cooking time.
