- 1/4 cup heavy cream

Instructions
- Make the Caramel: In a heavy-bottomed saucepan over medium heat, melt the sugar while stirring constantly until it turns a deep amber color. Immediately whisk in the butter until fully melted and combined. Slowly pour in 1/2 cup heavy cream while whisking—be careful, the mixture will bubble vigorously. Continue stirring until smooth. Remove from heat and stir in the sea salt. Let the caramel cool for 10–15 minutes.
- Prepare the Chocolate Ganache: Place the chopped chocolate in a heatproof bowl. In a small saucepan, heat the remaining 1/4 cup heavy cream until just simmering, then pour over the chocolate. Let sit for 1 minute, then stir until smooth. Add vanilla extract and the cooled salted caramel, mixing until fully incorporated.
- Chill the Mixture: Refrigerate the caramel chocolate mixture for at least 2 hours, or until firm enough to scoop.
- Form the Truffles: Scoop out small portions of the chilled mixture and roll into balls using your hands.
- Coat the Truffles: Roll the truffles in cocoa powder or dip them in melted chocolate. Immediately sprinkle each with a tiny pinch of sea salt before the coating sets.
- Chill Before Serving: Place the coated truffles in the refrigerator until firm and ready to serve.
