  • 4 cloves garlic, peeled and smashed

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) to ensure it’s hot enough to roast the potatoes to a golden crisp and soften the feta nicely.
  2. Prepare Potatoes and Seasonings: Place the halved baby potatoes on a baking sheet, drizzle with olive oil, then sprinkle with dried oregano, paprika, salt, and pepper. Toss them thoroughly so every potato is evenly coated with the seasoning and oil.
  3. Add Feta and Garlic: Create a space in the center of the baking sheet and place the block of feta cheese there. Scatter the smashed garlic cloves around the potatoes to infuse the dish with a rich garlic aroma while roasting.
  4. Roast: Place the baking sheet in the oven and roast for 35-40 minutes, or until the potatoes are golden and crispy on the outside, and the feta cheese has softened and developed slight browning on top.
