Instructions
- Roast the Garlic: Preheat your oven to 400°F (200°C). Slice the top off the head of garlic to expose the cloves, drizzle with olive oil, then wrap it tightly in foil. Roast in the oven for 35–40 minutes until the garlic is soft, golden, and fragrant. Allow it to cool before handling.
- Prepare Garlic Paste: Once cooled, squeeze the roasted garlic cloves out of their skins into a bowl. Mash them thoroughly with a fork to create a smooth, fragrant garlic paste. Set aside.
- Make the Dough: In a large bowl, combine the all-purpose flour, baking powder, and salt. Add the warm water and 2 tablespoons of olive oil. Mix well until a dough forms.
- Knead the Dough: Transfer the dough onto a lightly floured surface. Knead for 3–4 minutes, until it becomes smooth and elastic. If sticky, sprinkle lightly with flour as needed.
- Shape the Flatbreads: Divide the dough into four equal portions. Roll each piece into a thin oval or round shape, about 1/8 inch thick.
- Cook the Flatbreads: Heat a skillet or griddle over medium-high heat. Place one flatbread at a time into the hot skillet and cook for 2–3 minutes on each side. The bread should puff slightly and develop golden brown spots.
- Finish with Garlic and Herbs: While the flatbreads are still warm, brush them generously with olive oil. Spread a thin layer of the roasted garlic paste over the top, then sprinkle with chopped rosemary, thyme, and parsley. Season with salt and freshly ground pepper to taste.
- Serve: Serve the flatbreads warm as a side dish or accompaniment to your favorite dips, soups, or grilled meats.
