For the Whipped Ricotta:

  • 1 cup whole milk ricotta cheese
  • 1 tablespoon heavy cream or milk
  • 1 teaspoon lemon zest
  • 2 tablespoons hot honey (or honey mixed with a pinch of red pepper flakes)
  • Chopped fresh parsley or thyme for garnish (optional)

Instructions

  1. Preheat the oven: Preheat the oven to 425°F (220°C).
  2. Roast the carrots: Place the carrots on a baking sheet, drizzle with olive oil, sprinkle with salt, pepper, and cumin if using. Roast for 20–25 minutes until tender and caramelized.
  3. Prepare the whipped ricotta: Blend ricotta, heavy cream or milk, and lemon zest until smooth. Season with salt.
  4. Serve: Spread whipped ricotta on a platter, arrange carrots on top, drizzle with hot honey, and garnish with herbs. Serve warm or at room temperature.
