For the Whipped Ricotta:
- 1 cup whole milk ricotta cheese
- 1 tablespoon heavy cream or milk
- 1 teaspoon lemon zest
- 2 tablespoons hot honey (or honey mixed with a pinch of red pepper flakes)
- Chopped fresh parsley or thyme for garnish (optional)
Instructions
- Preheat the oven: Preheat the oven to 425°F (220°C).
- Roast the carrots: Place the carrots on a baking sheet, drizzle with olive oil, sprinkle with salt, pepper, and cumin if using. Roast for 20–25 minutes until tender and caramelized.
- Prepare the whipped ricotta: Blend ricotta, heavy cream or milk, and lemon zest until smooth. Season with salt.
- Serve: Spread whipped ricotta on a platter, arrange carrots on top, drizzle with hot honey, and garnish with herbs. Serve warm or at room temperature.
