Instructions
- Roast the Beets: Preheat your oven to 400°F. Toss the cubed beets with olive oil to coat evenly, then spread them in a single layer on a baking sheet. Roast for 35 to 40 minutes or until the beets are fork-tender and caramelized slightly on the edges. Allow them to cool slightly before proceeding.
- Puree the Beets: Transfer the roasted beets to a food processor. Pulse until finely chopped or blend until smooth, depending on your texture preference for the jam.
- Prepare the Jam Base: In a medium saucepan, combine the pureed beets, sugar, apple cider vinegar, lemon juice, grated ginger, ground cinnamon, salt, and a splash of water. Stir to blend all ingredients thoroughly.
- Cook the Jam: Heat the mixture over medium heat until it comes to a boil. Then reduce to a simmer, cooking uncovered for 20 to 25 minutes.
