Instructions
- Preheat the oven: Preheat the oven to 350°F and line two baking sheets with parchment paper.
- Cream butter and sugars: In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Add eggs and vanilla: Add the eggs one at a time, mixing well after each. Stir in the vanilla extract.
- Combine dry ingredients: In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt.
- Mix the dough: Gradually add the dry ingredients to the wet ingredients and mix until just combined.
- Bake: Scoop tablespoon-sized balls of dough onto the prepared baking sheets, spacing them about 2 inches apart. Bake for 10–12 minutes.
- Make ganache: Heat the heavy cream until simmering, then pour over the chopped chocolate. Add butter and vanilla, whisk until smooth.
- Glaze cookies: Once cookies are cooled, spoon or drizzle the ganache over the tops. Let set before serving.
Notes
- For deeper flavor, add 1/2 teaspoon of instant espresso powder to the cookie dough.
- These cookies freeze well (unglazed or glazed).
