- Make the Filling: In a large mixing bowl, beat the softened cream cheese with granulated sugar and vanilla extract until the mixture is smooth and fluffy. In a separate bowl, whip the heavy cream using a mixer until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture, ensuring the mixture stays light and well combined without deflating.
- Assemble and Chill: Pour the cream filling over the cooled crust and use a spatula to smooth the top evenly. Cover the pan and refrigerate the cheesecake for at least 4 hours, or until the filling is set and chilled completely.
