Cucumber Lemonade:

  • 1 large cucumber (peeled and chopped)
  • 1 cup freshly squeezed lemon juice (about 46 lemons)
  • 1/2 cup honey or granulated sugar (adjust to taste)
  • 4 cups cold water
  • 1 cup ice
  • lemon slices and cucumber rounds for garnish (optional)
  • fresh mint leaves for garnish (optional)

Instructions

  1. Prepare Cucumber Juice: In a blender, combine the chopped cucumber and 1 cup of water. Blend until smooth, then strain through a fine mesh sieve into a pitcher to remove pulp.
  2. Mix Lemonade: Add the lemon juice and honey (or sugar) to the cucumber juice and stir until fully dissolved. Pour in the remaining 3 cups of cold water and mix well.
  3. Serve: Add ice to the pitcher or individual glasses. Garnish with lemon slices, cucumber rounds, and mint leaves if desired. Serve chilled.
