Cucumber Lemonade:
- 1 large cucumber (peeled and chopped)
- 1 cup freshly squeezed lemon juice (about 4–6 lemons)
- 1/2 cup honey or granulated sugar (adjust to taste)
- 4 cups cold water
- 1 cup ice
- lemon slices and cucumber rounds for garnish (optional)
- fresh mint leaves for garnish (optional)
Instructions
- Prepare Cucumber Juice: In a blender, combine the chopped cucumber and 1 cup of water. Blend until smooth, then strain through a fine mesh sieve into a pitcher to remove pulp.
- Mix Lemonade: Add the lemon juice and honey (or sugar) to the cucumber juice and stir until fully dissolved. Pour in the remaining 3 cups of cold water and mix well.
- Serve: Add ice to the pitcher or individual glasses. Garnish with lemon slices, cucumber rounds, and mint leaves if desired. Serve chilled.

- For a sparkling version, replace half the water with sparkling water just before serving.
