Instructions
- Raspberry Sauce: In a small saucepan over medium heat, combine raspberries, honey, and lemon juice. Cook for 3–4 minutes until raspberries break down into a sauce. Remove from heat and let cool slightly.
- Chia Pudding: In a medium bowl, whisk together almond milk, vanilla extract, and chia seeds. Stir in the raspberry mixture until evenly combined.
- Divide mixture into 4 small jars or serving glasses. Cover and refrigerate for at least 4 hours, or overnight, until thickened.
- Serve chilled, topped with extra raspberries, shredded coconut, or dark chocolate shavings if desired.
Notes
