Ube Cream Mixture

Instructions

  1. Whip the cream: In a large bowl, whip the heavy cream until stiff peaks form to create a light and airy texture that will be folded into the ube mixture.
  2. Mix the ube filling: In another bowl, combine the mascarpone cheese, ube halaya, sweetened condensed milk, and vanilla extract until smooth. Add the ube extract if using, and mix thoroughly to blend flavors evenly.
  3. Fold whipped cream: Gently fold the whipped cream into the ube mixture until well incorporated and fluffy, making sure not to deflate the cream.
  4. Prepare ladyfingers: Pour the milk or coconut milk into a shallow bowl. Quickly dip each ladyfinger into the milk for 1–2 seconds on each side to lightly moisten without making them soggy.
  5. Layer the tiramisu: Arrange a single layer of dipped ladyfingers in the bottom of an 8×8-inch dish. Spread half of the ube cream mixture evenly over the ladyfingers.
  6. Add second layer: Repeat by dipping the remaining ladyfingers and layering them on top of the ube cream. Spread the remaining ube cream over this second layer and smooth the surface.
  7. Chill: Cover the dish and refrigerate for at least 4 hours, preferably overnight, to allow the flavors to meld and the dessert to set properly.
  8. Serve: Before serving, dust with purple yam powder or sprinkle crushed ube cookies on top for an attractive finish and added texture.
