Ingredients
Scale
Ube Cream Mixture
- 1 cup ube halaya (purple yam jam)
- 1 cup heavy whipping cream
- 8 oz mascarpone cheese (softened)
- 1/2 cup sweetened condensed milk
- 1 teaspoon vanilla extract
- 1 teaspoon ube extract (optional, for color and flavor)
Other
- 1 cup milk or coconut milk (for dipping)
- 1 pack ladyfinger cookies (about 24)
- Purple yam powder or crushed ube cookies for topping (optional)
Instructions
- Whip the cream: In a large bowl, whip the heavy cream until stiff peaks form to create a light and airy texture that will be folded into the ube mixture.
- Mix the ube filling: In another bowl, combine the mascarpone cheese, ube halaya, sweetened condensed milk, and vanilla extract until smooth. Add the ube extract if using, and mix thoroughly to blend flavors evenly.
- Fold whipped cream: Gently fold the whipped cream into the ube mixture until well incorporated and fluffy, making sure not to deflate the cream.
- Prepare ladyfingers: Pour the milk or coconut milk into a shallow bowl. Quickly dip each ladyfinger into the milk for 1–2 seconds on each side to lightly moisten without making them soggy.
- Layer the tiramisu: Arrange a single layer of dipped ladyfingers in the bottom of an 8×8-inch dish. Spread half of the ube cream mixture evenly over the ladyfingers.
- Add second layer: Repeat by dipping the remaining ladyfingers and layering them on top of the ube cream. Spread the remaining ube cream over this second layer and smooth the surface.
- Chill: Cover the dish and refrigerate for at least 4 hours, preferably overnight, to allow the flavors to meld and the dessert to set properly.
- Serve: Before serving, dust with purple yam powder or sprinkle crushed ube cookies on top for an attractive finish and added texture.
