Instructions
- Preheat oven and prepare the pan: Preheat oven to 350°F (175°C) and grease a 9×13-inch baking pan.
- Mix dry ingredients: In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt.
- Combine wet ingredients: In a large mixing bowl, mix granulated sugar, brown sugar, pumpkin puree, oil, eggs, and vanilla until smooth.
- Blend dry and wet mixtures: Gradually add dry ingredients to the wet mixture, mixing just until incorporated.
- Bake the cake: Pour batter into the prepared pan, smooth the top, and bake for 30–35 minutes until a toothpick inserted in the center comes out clean. Let the cake cool.
- Prepare the frosting: Beat cream cheese and butter until creamy. Add caramel sauce, vanilla, and salt, mix until smooth. Gradually add powdered sugar and beat until fluffy.
- Frost the cake: Spread frosting over the cooled cake and drizzle with extra caramel if desired.
