Instructions

  1. Sauté Vegetables: In a large pot, melt the butter over medium heat. Add the chopped onion, carrots, and celery, and sauté for about 5 minutes until the vegetables are softened.
  2. Add Garlic: Stir in the minced garlic and cook for an additional 1 minute to release its aroma.
  3. Create Roux: Sprinkle the flour over the sautéed vegetables and cook for 2 minutes, stirring constantly to avoid lumps and form a light roux.
  4. Add Broth and Potatoes: Slowly whisk in the chicken broth, then add the diced potatoes along with salt, black pepper, dried thyme, and smoked paprika. Stir well.
  5. Simmer: Bring the mixture to a boil, then reduce the heat and let it simmer for 20 minutes, or until the potatoes are tender.
  6. Thicken Soup: Lightly mash some of the potatoes in the pot to thicken the soup while leaving chunks for texture.
