Instructions

  1. Boil the Potatoes and Green Beans: In a large pot of salted water, boil the baby potatoes for 8–10 minutes until they are just tender. Add the green beans during the last 3 minutes of cooking to slightly soften them. Drain both vegetables and set aside.
  2. Sauté Garlic: Heat olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute until it becomes fragrant but not browned.
  3. Cook Vegetables in Skillet: Add the drained potatoes and green beans into the skillet with the garlic. Season with smoked paprika, red pepper flakes if using, salt, and black pepper. Cook for 5–7 minutes, stirring occasionally, until the potatoes turn golden and the green beans remain slightly crisp.
  4. Add Butter for Richness: Stir in the butter if desired to add extra richness and flavor to the skillet dish.
  5. Garnish and Serve: Remove from heat and sprinkle chopped fresh parsley or chives over the dish before serving to add freshness and color.
