- 1 cup chopped pepperoni or cooked sausage
- 1/2 cup pizza sauce (plus extra for dipping)
- 2 tablespoons chopped fresh basil or parsley (optional)
Instructions
- Preheat the Oven: Preheat the oven to 375°F and lightly grease a mini muffin tin.
- Mix Dry Ingredients: In a large bowl, whisk together the flour, baking powder, garlic powder, Italian seasoning, and salt.
- Combine Wet Ingredients: In another bowl, whisk the eggs and milk until combined. Stir the wet mixture into the dry ingredients until just combined.
- Add Remaining Ingredients: Fold in the mozzarella, Parmesan, pepperoni or sausage, and pizza sauce.
- Fill Muffin Cups: Spoon the batter evenly into the mini muffin cups, filling each about 3/4 full.
- Bake: Bake for 18–20 minutes, or until puffed and golden brown.
- Serve: Let cool slightly before removing from the pan. Serve warm with extra pizza sauce for dipping.
